There are lots of different mules out there today but I guarantee this one is unique. It's bacon bourbon whiskey, ginger beer and a little lime. That's right, I said bacon bourbon whiskey. Lets just admit that everything tastes better with bacon. You can't just buy bacon whiskey over the counter. So first we have to make the bacon bourbon whiskey.

I learned this recipe from the bartender at Amen Corner restaurant in Charleston, SC. First, pour your half gallon of bourbon whiskey of your choice into a lasagna dish. DO NOT THROW AWAY THE BOTTLE. I wouldn't go too expensive on the bourbon whiskey. I prefer Wild Turkey American Honey. Next, cook your bacon. As soon as you take it out of the oven or off the stove place the bacon into the lasagna dish with the bourbon whiskey while it is still hot. Cover with saran wrap and let it sit on the counter for an hour or two. Then place the dish into the freezer for 12 to 24 hours. After the freezing period take the dish out and remove the bacon. Place the bacon into a zip lock bag and store away in the fridge. Try to scoop out all of the solid fat lobules and discard. Filter the rest of the bourbon whiskey through a coffee filter or cheese clothe back into the bottle.

Ready to serve. Mix your bacon bourbon whiskey with ginger beer and a little lime. Grab a half strip of the bacon you saved, warm it in the microwave for 10 seconds and use it as garnish. That's how it's done in Carolina.
