To be politically correct, this is chicken and waffles on a stick, wrapped in bacon. Thats right, I said bacon.

It's a Tim Smith favorite.

Start by grilling your boneless chicken breast, careful not to over cook. Then pull out your portable fryer and get your oil nice and warm. Put the chicken strip on a skewer and wrap the chicken with a strip of bacon (pin with toothpicks). Dip in waffle batter and place in fryer for 10-20 sec. Dip again in waffle batter and place back into the fryer for 10-20 sec. Repeat until the batter is at the desired thickness (3 dips are usually enough). Drizzle with a little maple syrup and ready to serve.
